Warm & delicious packed full of goodness!!
Ingredients (serves 500 calories per serving)
300g chicken breast
1 spring onion
100g mushrooms
100g chopped spinach
50ml passata
3 tablespoons natural yogurt
2 tablespoons masala paste
100g wholegrain basmati rice
Method
Chop and fry the chicken until brown then add the spring onion and stir in the curry paste. Cook for a couple more minutes then add the mushrooms and passata and cook for a further 8 - 10 minutes. Then add the spinach to wilt and stir in the yogurt, simmer for a couple of minutes then serve with the rice. Cook the rice according to the packets instructions (for more taste add cumin seeds to the rice)
